The Story

The 2010 Cognac Cask is a limited edition rare cask finished, cask strength (53.8% ABV) and non chill-filtered Irish single malt.

After maturing for over seven years in Oloroso sherry butts and bourbon barrels, Alex Thomas, our Master Blender, finished this outstanding whiskey in ancient cognac casks from the Charente region in France. Each Limousin oak cask has previously aged exceptional Cognac for at least fifteen years, imbuing the whiskey with a rich tableau of ripe fruit, candied figs and hints of almond. And where others might recask their whiskey for just six months or so, we’ve added deeper waves of flavour by maturing ours in these Cognac casks for a further five years.

The years have intensified the Cognac’s Ugni Blanc grape aromas, resulting in a single malt bursting with ripe pear and buttery honeycomb with layers of deeper cinnamon spice, leather and dried fruits. It’s a sensational whiskey that stands with the best of Irish single malt, a giant in its own right.

Gentle oak married with cinnamon spice, ripe fruits and a honeycomb sweetness

TASTE

An initial hit of sweet caramel and ripe pear, followed swiftly by flavours of dried dates, sultanas, figs and a hint of almond. This develops into sweet vanilla, warm cinnamon and delicate spices, perfectly showcasing the character of Bushmills and the remarkable aged cognac that was previously housed in these rare casks

FINISH

An exceptionally comforting long, warm finish that offers a well-balanced complexity of delicate wood flavours that linger on the palate entwined with sweet ripe pear
